Sazerac
A Sazerac is a long standing tradition of New Orleans, the city long acknowledged as the home of the cocktail among other dubious titles. Although first created in the early 1800's, it wasn't until the 1850's that this drink became the signature cocktail of the "coffee house" of the same name.
While there are a few variations on this classic cocktail, the recipe below reflects a more tradition version of the drink. It's perfect for a truly authentic Mardis Gras celebration.

Start with an old-fashioned glass and coat the inside with 1/2 teaspoon of Absinthe or Herbsaint. Then, fill a cocktail shaker with ice and add 2 oz of Rye Whiskey (or Congac), 1 teaspoon of Simple Syrup, and 4 dashes of Peychaud's Bitters. With a bar spoon, stir your drink for about 30 seconds or until it is cold. Strain your cocktail into the prepared glass. For a final touch, twist a Lemon Peel over the glass and then rub the twist over the rim of the glass and serve.
